Non-alcoholic Bellini with Peach Syrup
Ingredients :
½ oz (15 ml) peach syrup
3 oz (90 ml) cold non-alcoholic sparkling wine
1 oz (30 ml) cold apple must
Peach (to garnish)
Preparation :
Pour the cold sparkling wine into a flute.
With the back of the spoon
Carefully pour in the peach syrup so as not to create too much foam.
Decorate with peach slices.

Finally a classic cocktail whose exact origin is known! The Bellini was created by Giuseppe Cipriani in 1948 at Harry's Bar in Venice, a place frequented by Ernest Hemingway, Orson Welles and Truman Capote among others. Inspired by the Venetian painter Giovanni Bellini and white peaches, which are found in abundance during the summer, Cipriani thus invented the city's emblematic drink.
