Hurricane with Passion Fruit Syrup and Grenadine Syrup
Ingredients :
1 oz (30 ml) amber or dark rum
½ oz (15 ml) passion fruit syrup
1 C. (5 ml) grenadine syrup
½ oz (15 ml) fresh lemon juice
Paper umbrella (for garnish)
Preparation :
Put all the ingredients, except the grenadine, in a shaker.
Fill with ice cream and stir until your fingers get very cold.
Strain through a fine strainer into a tall glass.
Gently add the grenadine.
Garnish with a paper umbrella.

The cocktail culture is rich and ancient in New Orleans, as evidenced by our Sazerac and Vieux Carré recipes. Here is another, dating from the 1940's, with a sulphurous history: the Hurricane is said to have been born in the clandestine bar of Pat O'Brien, who was trying to sell off his stocks of bad rums! It is traditionally served in a round, short-stemmed glass, now known as the Hurricane glass, so long has the tropical creation of “Pat” gone down in history.
