Classic Tom Collins
Ingredients :
1 ½ oz (45 ml) Old Tom gin or gin (woody/spicy/floral)
½ oz (15 ml) simple or cane syrup
¾ oz (23 ml) lemon juice
3 oz (90 ml) sparkling water
Lemon wedge (for garnish)
Preparation :
Add the ingredients to a tall glass, except the sparkling water, and fill with ice.
Stir with a chopstick or bar spoon until your fingers get cold.
Top with sparkling water.
Garnish with a slice of lemon.

The mid 1800s. Old Tom, a kind of gin. A waiter nicknamed Collins at Limmer's Old House, London. Or, a hoax of the same name. In the end, one of the most beautiful and simple cocktails in history was born.
